Ananaksen ja melonin käsittely

     

Valitsimme aiheeksemme ananaksen ja melonin käsittelyn, sillä ne sopisivat hyvin välipaloiksi ja nämä leikkaustekniikat voisi mahdollisesti opettaa peruskoulussa.

Ananas (Ananas comosus) on kotoisin Etelä-Amerikasta ja se muistuttaa muodoltaan suurta käpyä. Hedelmäliha on ananaksessa vaaleankeltaista ja aromaattisen makuista. Ne tuodaan Suomeen raakoina, sillä kypsät ananakset eivät kestä kuljetusta. Raaka ananas on kova ja kiinteä kun taas kypsä hedelmä tuntuu painettaessa joustavan pehmeältä ja tuoksuu makealta. Raaka ananas kypsyy kuitenkin huoneenlämmössä muutamassa päivässä. Lehtiruusukkeen keskimmäiset lehdet irtoavat kypsästä ananaksesta helposti. Ananaksen myyntisesonki on huhti- toukokuussa.

Ravintoaineet

Ananas sisältää paljon samoja vitamiineja ja kivennäisaineita kuin muutkin hedelmät, mutta sen lisäksi se sisältää myös joitain vähemmän tunnettuja hivenaineita, joita keho tarvitsee. Tuore ananas on terveellinen ja vähäkalorinen hedelmä, joka vie nälän pois ja sopii siksi raikkaaksi välipalaksi.

2,5 dl tuoretta ananasta

  • 80 kilokaloria
  • 0g rasvaa
  • 1 g proteiinia

Säilytys

Ananas tulee säilyttää viileässä +8 – +12 asteessa. Ananaksen pintaan tulee helposti painumia ja vaurioita, minkä takia sitä tulisi säilyttää pehmeällä alustalla. Ananaksen päälle ei tämän vuoksi myöskään kannata pinota mitään.

Käyttö

Ananaksen maku sopii mainiosti jälkiruokiin ja juomiin ja se käy myös liharuokien koristeeksi ja lisäkkeeksi. Se on olennainen raaka-aine myös monissa eksoottisissa ruuissa. Hedelmän keskellä oleva puumainen ydin yleensä poistetaan.

Ananaksen käsittelyyn tarvitset:

  • leikkuulaudan
  • kokkiveitsen
  • pienen veitsen (esim. nuorille turvallisuussyistä)

Laita ananas poikittain leikkuulaudalle ja leikkaa molemmista päistä n. 2 cm pois. Käännä ananas pystyasentoon, niin että tasainen pohja on tukevasti leikkuulautaa vasten.

  1. Leikkaa ananas keskeltä halki. Keskikohta on kova, joten valitse terävä veitsi.     2. Laita puolikas ananas leikkauspinta alaspäin  ja leikkaa se kahtia. 3. Toista sama niin, että sinulla on yhteensä kahdeksan ananasvenettä.

4.Leikkaa veneestä kova keskikohta pois (vaihda veitsi halutessasi pienempään)         5. Leikkaa ananaksen kuori pois.

Voit myös vaihtoehtoisesti kuoria ananaksen näin.

Hunajameloni (Cucumis melo) on yksi monista melonilajeista, jotka jaetaan vesimeloneihin ja sokerimeloneihin. Vesimelonien siemenet hajaantuvat eri puolille hedelmälihaa kun taas sokerimelonien siemenet keskittyvät yhtenäisesti hedelmän sisäosiin. Sokerimeloneihin kuuluvat mm. verkko- ja hunajameloni sekä cantaloupe-, ogen- ja galiamelooni. Aasia ja Afrikka ovat melonien kotimaita.

Hunajamelonin kuori useinmiten keltainen, myöhäiset lajikkeet vihreitä. Sen hedelmäliha on vaaleanvihreää tai vaaleankeltaista ja mehukasta. Maku on raikkaan makea ja varsin mieto. Kypsä meloni on pehmeä ja mehukas ja vielä raakaa melonia voi kypsyttää huoneenlämmössä. Koska melonit ovat arkoja painaumille, on melonin kypsyyttä hyvä kokeilla varovasti tyvestä painellen.

Säilytys

Melonit tulisi säilyttää viileässä, +8 – +12 asteessa. Osa meloneista, kuten cantaloupe- ja hunajameloni, tuottaa runsaasti etyleeniä, jota syntyy kasvien hengityksessä. Niitä ei siis kannata säilyttää sellaisten kasvisten ja hedelmien, esimerkiksi banaanin, läheisyydessä, jotka kärsivät etyleenistä.

Käyttö

Hunajameloni sopii hyvin jälkiruokiin ja makupaloiksi esimerkiksi kinkun kanssa.

  • Leikkuulaudan
  • Kokkiveitsen
  • Lusikan

1.Leikkaa hunajameloni kahtia. 2. Kaavi lusikalla siemenet pois.loppu

3.Laita meloni leikkauspinta alaspäin leikkuulaudalle ja halkaise se kahtia. 4. Toista sama niin, että sinulla on kahdeksan melonivenettä. 5. Leikkaa kuori pois meloniveneestä.

Paloittele melonit ja ananakset samankokoisiksi paloiksi ja tarjoile kauniissa kipossa. Hedelmäsalaatti toimii hyvin aamupalalla, välipalana tai jälkiruokana esimerkiksi suklaafonduen kanssa.

  1. Turvallinen veitsen käyttö näiden isojen hedelmien kanssa on tosi oleellista, kuten postauksessa esitättekin. Etenkin vesimeloni on välillä hurjan hankalaa.

    Oletteko muuten törmänneet somessa pyörineisiin vesimelonin kuutioimis -videoihin, joissa meloni kuutioidaan viiltelemällä kuoreen eri suuntaisia viiltoja? Mun oli pakko kokeilla yhden videon mallia. Hyvin toimi, mutta tässäkin toki harjoitus tekee mestarin… 🙂

Pitänee joku kerta testata 🙂 Ja mitä tulee kotimaisiin hedelmiin niin tähän aikaan vuodesta on käsitykseni mukaan talven tulosta johtuen melko vaikeaa saada ihan kotimaisia hedelmiä, tulevatkohan lähimmät sitten Euroopasta kenties? Sattui silmään että kotimaista karpaloa saa vielä melko myöhään Suomestakin ,loka-marraskuuhun asti, joten vaikkei hedelmiä löytyisi niin voi niiden sijasta suosia vaikkapa marjoja joiden satokausi kestää pidempään. 🙂 Kiitos kommenteista kaikille !
